[G&K] Difference in difficulty from Emperor to immortal

I have both BNW and G&K enabled. I am using the really advanced setup 1.5 mod. With this mod I set up the game as follows: I picked China with 10 players, In map options I only changed: no city states, Map type: Highlands, small map, abundant resources, Mountain pattern: ridgelines, mountain density: dense, bodies of water: small lakes. disabled all natural wonders, made whole map visible, and disabled civilizations I thought were made weak from these options. In game setup: Difficulty level: immortal, game pace: standard, Game era: ancient, victory types: Time and Domination, disabled nuclear weapons, policies, and no Espionage.

With this setup I rolled up many maps, finding one that is surrounded by mountains with one easily defended pass, just to see if I can win on immortal. The conclusion I reached is this: you can only win on immortal, or Deity. if the computer does not attack you in the later stages of the game! The reason is this: on Immortal or Deity the computer will gain massive tech lead on you and there is no defense against bombers. I was able to hold the pass with just 3 crossbowman against many Great war Infantry and cannon, but when the bombers showed up there was no hope, there is no hiding from them.

If the computer does not attack you, you can turtle until you have a number of Bombers, and I believe, roll over the computer with superior tactics. Don't get me wrong I think Civ 5 is a really great and addictive game, but I think the jump from Emperor to immortal is a massive jump in difficulty, and the jump from conventual combat to Bombers is also a massive jump in ability to capture settlements/kill units, so much so I think it breaks the game.

I have had a lot of fun playing Scramble for Africa where technology was locked at the start, along with other things that were disabled. Sometimes I think the Civilization series tries to keep the player involved in to many different levels (such as: Technology, Religion, City states, policies, Espionage), that it reduces the fun of the game. Granted you can turn off some of them, and maybe ignore religion, but Technology is such a core part of the game that can't be turned off. Does anyone know of any mods that fix this problem? Granted really advanced setup does allow to turn off technology, but you can then only build: settlers, workers, scouts, and warriors.
