Does an airplane's stats mean anything when set to air superiority???

Or does air superiority just mean the enemy plane will be shot down no matter what. Say if air superiority is set on %100. Does this mean enemy planes will be shot down every time? Even if it is a biplane fighter vs a stealth bomber?

Do the defense or offense stats mean anything for air wars or is it just for attacking land units? What about hit points for air units? Are they good for anything?
 
The percentage you're talking about is the chance that the unit will intercept an attacking plane - not the chances of shooting the attacker down - to shoot an incoming plane down it needs to both intercept and then defeat in battle. The fighter on air superiority, if it intercepts an attacker, uses its Attack value against the incoming plane's Defense value -- just like a land unit fight the respective A and D values, together with the random number generator for each combat round, determines which unit loses a HP (and eventually which plane is shot down). The A & D values of planes have no bearing on attacking land units -- only bombardment related values (bombard values, rate of fire) are used in bombing land units or targets.
