This also touches on another issue for me. Infantry is impossible to overcome with cavalry unless the numbers are so lopsided and you're willing to take massive losses, even if they do retreat sometimes.

remember, if the city is over 12 population, they get something like 2 times their defense rating, or for infantry, 20 defense.

if over 6 population, they get 1.5 times, or 15 defense.

knocking the city pop down below either of these thresholds will help.
