And when nuking kills enemy unites and ravaged their lands...
Does that ultimately affect their production and food soource?
If so... maybe nuking your enemies constantly will keep them in the dark ages

...not exactly. I think the term you're looking for is pillage. When a city is nuked, tiles around the city (i believe it's a 2 tile radius) are affected. Those tiles are pillaged (meaning the improvement on the tiles are destroyed.) Some tiles may also get fallout. Fallout prevents a city from working the tile. You need a worker to scrub the fallout, then repair the pillaged improvement.
A nuke may also remove forests/jungles from terrain. So if you have a jungle/trading post/science generating city, a nuke can change all that.
