Newbie questions of the day and if I had read some of the other threads I probably would already have the answer, but I'm still in awe of all the information provided by this site (that's a good thing).

Why would I plant a forest (middle age enginerring) if I cleared it earlier during the ancient times? Will resources appear if I don't clear a forest? Will mines or irrigation be replaced (removed) if I plant a forest?

I'm still new to the game and havent completed my first game but I'm getting close to middle ages techs?

Why would I plant a forest (middle age enginerring) if I cleared it earlier during the ancient times?
The general logic is that you cleared it in ancient times to get free shields and to allow the land to be irrigated to boost population growth. Once your cities are at size 12, you might want to plant some forests to improve the shield production if you don't have many hills and mountains, since surplus food is no longer useful. Some people will plant a forest on a tile originally flat so that they can clear the forest for some shields.
Will resources appear if I don't clear a forest?
The locations of every single resource is determined before the game starts. That means that coal will appear on tiles that were hills, mountains, or jungle at the beginning of the game, and I would list more examples except I haven't paid much attention to resources other than horses and iron, so I can't really.
Will mines or irrigation be replaced (removed) if I plant a forest?
Yes.

Sorry, this is all I could pull out. Other people who write much better posts than me will certainly link to some more useful stuff.

A mined grassland (not bonus-grass) gives 1 shield and 2 food. If the city doesn't need to grow anymore (growth-cap size 12) and there so happen to be enough food from other tiles (say a food bonus) a forest will turn it into a 1 food and 2 shields tile.

Once you have railroads, a mine+rail will give the same shields.

Also, you can get the 10 shields bonus once from each tile. So you can still get the bonus from tiles that have never been forest in the past.

And there is basically nothing better you can do with tundra tiles than planting a forest on them. It also makes them look better.

Resource locations are pre-selected when the map is generated, at the start of the game. Regardless of whether you have the tech to see them, terraforming will not add, nor remove these resources.

I'd say you are already there because enginerring is a middle age tech! ;)
