Gold from razing

If anyone can point me in the general direction of which file I'd need to look for modifying the amount of gold received from razing a city, I would be most obliged.

Check GlobalDefines.xml. Start at "BASE_CAPTURE_GOLD" and the next few settings would likely apply.
