I contacted support to see if it was a bug or by design, and got this reply. They weren’t able to go into specifics but this at least helps us understand how it works.

“Upon entering a new era, you retain an amount of gold and influence proportional to your civilization's per-turn earnings at that time.
So, in conclusion, when you build a robust economy in your current civilization, you'll maximize retained resources when advancing to a new era. I hope this clarifies things further for you.”

You keep 3000 gold and 350 influence upon transition, so use any excess by the end of an age or lose it.

That is obviously untrue, going by both what I just posted and other peoples feedback saying the amount they had rollover was a lot different than what you just stated.

A max of 3000 +1 turns worth lines up exactly with my experience as well. Where have you seen differently.

I've got 3000 Gold + the Gold per turn of the first new age turn (whether at 2900, 3100 or 7000 before the transition), and 300 Influence + the Influence per turn of the first new age turn (around 500 before the transition).
My last game I had 3000 also but I’ve had people say on our FB group that they had much lower amounts roll over. Maybe it is capped at 3000 but can be much lower if you have a minimal amount in the previous era.

A couple of the members of our FB group reported they had received less than 2000. It was in a reply to a post I made saying I believed it was 3000. My post here came from CiV tech support, so I believe it must be true.

The support is 2K Team, not Firaxis directly, so they can also be wrong, not understanding well the question, or rephrasing the answers of the dev with a formulation that is less accurate.
You're bot right with a cap at 3000.

It's also possible that game speed makes a difference in exactly how much roles over, like it does with some other aspects of the game.
