Help with Units.artdef?

I'm trying to get a Unique Unit to look and act like a knight unit. I can see from the Logs/ArtDef.log file that my art file is being added because of this line.

Added art file 'Civ6-Italy: d8i08824-7j56-3IG8-F2JI-f3j0j6B22Fgd' to the ArtDefProvider.​

If I've changed the Units.artdef file and load a saved game should I expect to see the change?

If anyone that's successfully changed their Units.artdef file could give me a pointer it would be much appreciated.

The XML editor that Deliverator suggests immediately pointed out a mismatched tag.
