I play civ3 on a mac and every time i capture an opponents city, all the other cities from that country drop to rumble and they set up their capital somewhere far from me. why is this happening? what can i do to fix it?

I think you are playing in elimination mode (if a civ loses a city, it is eliminated) with respawn on (if an AI civ is eliminated, it is reborn in an empty area, if there is an empty area available). These are choices that you make when setting up the games in the beginning. Just make sure to turn respawn and elimination off when you start a new game and you should be okay.
