How to remove a citizen from a settlement?

I'm just wondering whether we can remove a colonist who has already been joined into one settlement, to say perhaps join another settlement.

Can this be done in the game?

Yes, just drag him to the garrison, where units outside the settlement appear.

It looks like if I remove an 'Expert Lumberjack' from my settlement, he'll lose his profession. Is that normal?

No that should not normally happen. A specialist does keep his profession unless you specifically clear it.
