I don't know if it's just my computer (older computer using windows 7), but if I take a screen shot of units on combat using the Print Screen key, they don't even appear. Is there a way around this?

You mean no units in the game appear at all... or just that you can't get a shot of the actual combat itself occuring?

It is incredibly difficult to get a screenshot of a combat sequence in game using Printscreen or any screenshot capture software... I have succeded twice in around 30 attempts when I was trying to capture a Nuke going off.

Your best bet is to use something such as Debut Video Capture Software (free)... you just press record, capture a video of the action, then do a printscreen on the correct video playback part you want (which you can pause or w/e in Windows Media Player).

It is much quicker than constantly messing with the other way around.

I use IrfanView (Freeware) for screenshots. It allows a great range of how-to-do.
I can press CTRL+F11 (keys can be adjusted) to make one or use the time feature = makes a screenshot every XX seconds.
You can adjust several things like output format ,quality ,screen size ,save path ...

Additionly IrfanView can be used for literally thousends of tasks. And it is the fastest viewer I ever seen. ...and I`ve seen a million softs since the mid 80`.

But I think there is something odd with screenshots and Civ 3... as it is incredibly difficult to time a screenshot to get a combat sequence in game. I think I have tried IrfanView (which is great), but the results were similar to hitting the PrintScreen button... the image usually captures after the battle is over or before it starts.
