I am playing Amurites with many last stage units - immortals, archmages, etc.
While at war with Mercurians, I found that angles are immune to magic.
Fireball works but it weaken only their offence strength. Their defense strength(very high in some units like Seraph) is still intact. My best immortal is not strong enough to take them.

Of course, I can use catapults or cannons. but..
I usually do not make siege units because they slow down entire army(Haste doesn't work)

Any tip from veterans, please?

It's impossible to affect only offensive strength. The wound system just doesn't work that way.

However, 3.5/6 can mean 3.5 strength out of 6 possible, or a little less than 50% damage; or it can mean a damaged unit with separate attack and defence, with no indication of how damaged the unit is.

The Angels have no special bonuses against magic IIRC. When you damage a unit, the attack/defence display changes to currentstrength/maxstrength display. You get the idea of how much is the actual strength by looking at the combat odds.

Angels are definitely not immune to magic, but they do have resistance to fire damage so fireballs aren't particularly effective against them. They are no better in this regard than orks or demons though. They have death and unholy resistance too so some other summons would also be weak against them, but they are far from immune.

As the others have said, their defenses are being lowered but the display is showing their current/max strength.

Got any Earth III casters? no colateral, but 10 str without any resistance from the angels is strong. Also, "sacrificing" you immortals to kill their strongest seraphs is smart. Build an obsidian gate in your capital and Immortals become the best cannon fodder around ;)

Rust can work great, since almost all angels use weapons and Basium's palace at the very least gives them iron, and if it's this late they probably have mithril. Each rusted guy then effectively becomes -4 strength and then some.
