Moving capital to aother city to avoid extermination

When I first tried to play, and AIs captured my capital, I was instant roadkill.

So as soon as I learned to play and began whupping other countries, I went straight for their capitals and conquered, only to find that they'd pulled a fast one on me. At the last moment, they switched the capital star to another city! So they were still fighting.

I need to know this trick next time someone attacks my capital. How do you do it?

If you have any cities left, the capital is automatically moved. So when the AI captured your capital, you didn't have any cities left for the capital to move to.
