Is it generally better to build all your wonders in one city or spread build your wonders in different cities?

I like to build my Wonders in mostly one city, especially early on, because it usually has the best production times. However, there are times to delegate the production of wonders. Macchu Picchu to a hillside city, Epics to the Cities which boast the most value, etc. It's usually best to keep all your Cultural Wonders in one city, esp since Hermitage and Broadcast Towers are such huge multipliers. The only exception is the Sydney Opera House, as that must be built in a coastal city. Wonders like Notre Dame, Taj Mahal, Pentagon really doesn't matter where you build them.

Also remember, if building wonders in a city near another civs border, be aware that your city has the possibility of being captured.

In a cultural game, each city should build at least one world wonder, to take advantage of Reformation. Otherwise, there's not much benefit in either spreading them or stacking them: there's not much synergy between different wonders. You might want to build wonders which give the same sort of GPP in the same city, to keep your GPP production 'pure'. In practice though, it's normal to build all wonders in the city with the best production, which is usually the capital.

The only reason I could think of to spread them around is to use the Reformation SP from Piety (+33% culture in all cities that have built a World Wonder) for a Culture Victory. Other than that you could probably be using your other cities for more useful things.
