Should I start with this game or Civ V?

If you need help you can use the Civapedia (the in-game wiki of everything) and the information will be correct. You can’t always guarantee that with mods as other has stated. Guides are also primarily for the base game if you plan on reading any.
This time I will defend Vox Populi! The Civpedia is generally as correct as it can be! At most it won't answer all questions such as the formula behind some mechanics. Also there's an entire separate forum on this site for it and it's still active.
This is what eventually stopped me from playing V. Build four cities and grow them like hell, go Tradition to Rationalism, then pick whichever ideology synergizes with your desired victory type and press "Next Turn" until you win. Gets boring fast once you've figured out (as most Civ V players did after a while) that one path to victory is so clearly superior to all the others.
This is exactly why I staunchly support VP. It removes that preset playstyle so many people hate. Having a proper AI helps you change things up too.

Definitely enjoying V so far, and it makes me excited that I have VI on the backburner. I will say I am absolutely terrible though. My units keep dying when i'm out in the open and the early game goes sooooo slow. I feel like I am doing a lot wrong

You're using Vox Populi, right? What are your settings and how exactly are your units dying? Best place to get advice is in the proper forum for it https://forums.civfanatics.com/forums/community-patch-project.497/

Played a couple games of Civ V. I definitely liked it and am glad I started there(since it was so cheap), but ultimately I decided to go ahead and grab CV VI since it was discounted. I figure for a game with so much to learn, i'd be better off with what's new and going from there. I also know I enjoy the graphics and tiles more in CV VI.

V definitely helped me learn what I am doing though and it was helpful to start there I think

Hey I've been playing Civ for two decades and thousands of hours and I still feel like I'm doing a lot wrong. There are so many little optimizations you can make in these games, it's not necessary to go for all of them unless you're playing on Deity.

Well, there you go. Hope you enjoy Civ VI. :)

Is there a suggested UI mod for Civ VI that works with the expansion? The base UI seems quite bad to me after having played CV modded

The UI's horrible compared with Civ V in either modded or unmodded form. I think the go-to is CQUI, though I don't know if it's yet been updated for Rise & Fall, but it's still a downgrade on Civ V.

I really enjoyed Civ V but I could never go back to it.
After a while I really started to hate the focus on tall empires. Building cities after turn 120 or so was actually a bad idea. Era of colonization? Not in Civ V. Better leave those awesome city spots alone unless you like to slow down your science and culture progression.

And if you like tall empires, R&F buffed them quite a bit anyway.

The mod seems to be broken with the expansion. It won't let me move units..

What I mostly want to know is how to you swap quickly to another unit after you give an order? In civ V with the mod it would automatically go to the next unit who needed orders. In this game I can't figure it out and it never notifies me when I have a unit that still hasn't been used yet in that turn.

It automatically cycles through all your units - unfortunately it does so in a way which means that if you miss the switch from one to another you can end up moving the wrong unit. It won't let you proceed to end the turn until everything has moved or been manually skipped. Ultimately that's even more of a chore than the Civ V notifications.

If you have a gaming mouse with a few additional buttons, you can also disable auto cycle, go to keybindings and use an extra mouse button for the "next action" command. It's so much better this way because the auto cycle is way too slow and laggy.
With the "next action" button you can cycle through all your units, production queues etc. and it will end your turn if nothing else is available anymore. At your own pace.
Of course, you can also use your keyboard. I prefer my mouse though.

So, I am quite surprised just how different V and VI are. I am not sure which I like more so far.

My first game in VI I had to restart because within 10 minutes my based got attacked by three groups of barbs all that one. I was definitely not expecting that. It seems early game battle units and destroying barb camps is very important now

Also, the builder instead of a worker is a bit weird. Districts I am still very confused on and I'm not quite sure how to build my base. It seems like my builder spends a lot of turns doing nothing because I don't have the required upgrades yet, and I'm worried about placing something in the wrong spot

There all good games, I have played Civ2 to Civ6 and loved them all. Never played civ1 but its probably good as well. Just play Civ6 since its new and more likely your friends and people on here play it.
