Simple questions.

I've gotta lil' question about the modding, since I'm quite fresh with the game. Is it possible to forbid all the civilizations to invent some technologies? I wanted the medieval age to be the top line of research in my game. I'd be thankful for yer help.

Can't you simply delete all of the other technologies after the final technology.
