I'm a little confused on what exactly "stealth attack" does in Civ3, and how it differs from making a unit invisible. Could someone clear this up for me, please?

Stealth Attack - when you can choose what unit to attack out of a stack of units (if there is a spearman [2 defense] and a pikeman [3], and you have a stealth unit, you might want to attack the spearman because it has less defense).

Inivisible - normal units can't see it, unless they try to enter a tile where it is (It will say 'would you like to declare war?'). Only units with "Detect Inivisible" can see invisible units.

If you had a stealth invisible unit, now that would be great.

You Do, GA. They're called Submarines. :p I can't think of anything other than subs that have stealth attack in the epic game.

  whats an 'Epic Game'?

A normal, unmodded, random map game. The type you get when you hit "Quick Start" or "New Game". :)
