Where's my great person/people when I build wonders?

I build a wonder, national or world, and I don't get my great people!? Used to get them but not anymore. Now I have to add them in "manualy"

You have to build more wonders. Wonders are what start your cities to produce Great Persons. Usually, a single World Wonder gives +2 or +3 points towards your Great Person. A city requires a certain number of Great Person points before one is born. And when it does, you'll get one.

I'm really not sure what you're referring to here. Do you mean you're never getting great people? Is the GPP bar full? You generally get fewer great people later in the game as each one costs more.

I may be misunderstanding you, but you seem to be under the impression that a wonder automatically gives you a great person. They don't, each wonder gives great person points, and once the bar is full a great person will appear. Each great person requires more points than the last.

By adding them in manually I presume you mean you are cheating with world builder. This is a very pointless activity.

I mean when a wonder says it gives you +2 great merchants for instance doesn't that mean you get 2 great people?

No, it gives you Great Person POINTS, which your city will accumulate towards your next Great Artist/Engineer/Merchant/whatever. When it has enough, a great person will be born on that city.
