Great bands that nobody's heard of!

Yonder Mountain String Band

They are a progressive bluegrass band that is heavily influenced by psychedelic music and jam bands in general. You could say they are like a cross between Phish/Grateful Dead and modern bluegrass.

Very cool stuff, and they are good introductory bluegrass band for people who have never given bluegrass a chance because their sound is decidedly un-country.
 
Symphony X....neo-classical progressive metal but actually musical and deep, not just technical self-indulgent wankery like most prog bands. Amazing vocalist Russell Allen (except for the self-titled first album, which had a horrendous singer), and one of the sickest guitarists on the planet Michael Romeo. The music sounds 10x better on CDs but here are some youtubes:

Beyond Twilight is fantastic. They play "progressive metal," but I honestly have heard no other music, prog metal or otherwise, that sounds even remotely similar to them. How to describe their style?... think of a murky shroud of varied thoughts and emotions drifting into and out of view, which gives the overall impression of... mental discord, unease, something troubling or puzzling... as though you were surrounded by a dark, unfamiliar, warped parallel universe that is utterly amorphous and indistinct. That's what their third album is like. Their second album is also kind of like that, but more concrete and with extra emphasis on the twisted aspects, making it feel like a horror movie, or the mind of a demented, evil genius. I haven't listened to their first album yet, but it is high on my music to-do list. Basically, I love their stuff because of how different it is and how well that different style is pulled off.
