I would not say newbie friendly, but it is newbie friendlier.

Depends. If you founded religion(s), then you want Prophet(s). Great Merchant get when low on funds (send to trade with far flung large city). Scientist for Acadamy. Artist for Culture Bomb. Engineer for hurry production. And of course the all can discover techs in there individual fields...

It should be in your production icon box. Are you sure the city you want to build a boat in is adjacent to a coastal tile? It must be adjacent, not just have coast in its fat cross.
