I discovered religion makes a difference too. Playing as Russia and starting a Dark age after a Heroic, one of my cities was about to flip in 6 turns. Checking the loyalty tab I found some were loyal due to religion, so it was easy to fix with all the excess faith.
I don't play at higher levels but do know the devs simply gave the AI tons of starting bonus's to create the difficutly levels. There's an informative chart on here somewhere. More troops, settlers, faster science and so on.

Extended Policy Cards (shows all effects)
CQUI - Community Quick User Interface (has a ton of UI improvements)
Quick Deals (See all offers at once, big time saver)
Detailed Map Tacks (shows adjacency effects)
TCS Free Walls for City States (keeps them alive longer)...
You don't describe anything about your game so the problem could be anything. Maybe you should have restarted instead of sticking with unproductive land, maybe you didn't crank out settlers quickly enough or settled them in bad spots?
Don't play on Marathon or epic if you are learning!
It'll take forever to learn the basics, let alone figure out what's important, how things work together and how to plan and deal with problems. Play at normal speed, make lots of mistakes and discoveries, then go back to slow once you've got a...
Does this get me excited to play the game? Absolutely not, does nothing for me. Worst intro ever, I'm afraid. I get bowled over by the awe and wonder of the scope of history but this... nah.
I think you mistook field cannons for siege units, whereas they are just strong range units with 60 attack - not siege strength. They make little difference against strong city walls.
