IMHO, the game's improved. I'd given up on CIV 5 due to the crazy AI, but GAK has made the game fun again.

I noticed a big difference between Warlord and Prince. On Warlord, the AI seems 'normal', if not passive. I switched to Prince and it went crazy. Thousands of years of peace, then the entire world coming after me. I'd fight them off and there'd be peace for a bit, then world war again - rinse...

I've been doing this lately and it's been hit or miss. I build nothing but warriors and lurk, waiting to steal my target's worker. I've been able to take out a capital defended by 2 warriors with only 4 of my own. But again, it's been hit or miss. When it works, it's a great advantage, but when...

Lately, I've been doing very well on Noble by building warriors first. If I can find a neighbor, I'll build 4 warriors and destroy their civilization. If I haven't found anyone with my second warrior, then I build a worker next, followed by another warrior (escort) and then a settler.

What is the best way to calculate how many farms a city will need to grow and be sustained with? Additionally, when you figure out how many farms you need, where's the best place to build them? Oftentimes, my placement seems good at first, but later on, I have to convert many tiles into farms...

Nope... :( I tried the game over again and did conquer the Celts. It was tough and my economy was a mess. Now I'm behind in tech and have the Americans and Turks biting up land.
