Hit cmd-H (like in any OS X program) or cmd-P (Civ3 specific). Both work for me.

I did not experiment that. Putting a large number (ten or so) of troops in just-conquered cities always prevented flipping for me. Anyway, if I understand well, the 1.17 patch is also supposed to correct that:
