Aircraft (and the phenomena of shooting it down)

i have recently played a prince dif game on a huge pangae map firstly conquering the mongols 3 biggest citys in 640 ad after which settling for peace so i could help my ally kill the germans after which the mongols were also finished.
anyway i ended up with about 1/3 of the land united under the red flag of communist japan and i was beginning to build up an airborn military overseas and over land (carriers and citys) now i am uncertain how it is decided when a piece of airborne hardware risks to be shot down or shoots something else down. i had my fighters (the pre-composite ones) attack people inside of citys and also attack the citys defenses (in big numbers it made a big difference).

now i had my aircraft be damaged when there was AA inside of the enemy town (infantry or even aircraft) or when i attacked a tile that was quite close to a town with intercepting fighters, only rarely were my aircraft shot down completely (i always repaired the ones that were damaged before putting them back on the offense).

iv also had it happen that i was taking over egypt and i continually shot down normal fighters (which were attacking my tank stack near her capitol) with my jet fighters of which i dont know if they came from my carriers or the city that i had conquered both about 5 tiles away.

i need to know:
-how far exactly (jet) fighters go to intercept aircraft and if they intercept aircraft within enemy borders and if borders have influence on this.
-how i get my jet fighters to continue intercepting even if i move the carrier they are on around.
