I think all you warmongering must-finish-the-game-while-I-still-have-Cavalry types should try a slower game, you are missing out on half the game. And the best bit to my mind. Play on a bigger map, with more opponents.
BTW I know what you mean about not finishing games, turns can take half an hour or more easily if you are at war in modern era, like in my current game...
