I was playing the other day and saw barbarians actually attack a City State. They got its walls down to about 50% but couldn't take the city. I think it was a CS anyway... my memory isn't great. :)

I haven't seen this before. It made me wonder: What happens if the barbarians take a city? Or a CS? I remember in previous Civ games barbarians could take cities, and sometimes did, but I've never seen it in Civ 5.

There's an achievement for having your city "ransomed" by barbarians. I haven't bothered to get it yet.

No, they don't. if your city health bar drops to zero you lose a good amount of gold I believe, and like Arachnofiend said, it unlocks the "Ransacked by barabrians" achievement.

I remember in one Civ game (I think it was III) you could play as the barbarians by editing a settings file. That was kind of fun, but they couldn't do research, as I recall.

I actually started a game specifically for that achievement, as Polynesia IIRC. A lot of hitting next turn. ;)
