I'm playing Spain now and I guess the trick is attacking Saladin for his African cities and then making peace and start a large European War with everyone attacking one guy (Basil or Frederick) while you settle in Afrika
China is a quite easy one. However I only tried on noble level. I never lost any city to mongal or barb. This massive empire has enabled me to develop an army, and late in the game, I destroyed the minor civilizations of the Byzantines and the Vikings, and then the Spanish, and the English with my army of tanks. But for most of the game I avoided fighting.
