I second the medieval troubadours and throw in the Minnesanger Nidhart von Reuenthal as well.
Apart from that some of my favourites are:

The canzoni and concerti of Adam Jarzebski.
The suites from Banchetto Musicale by Johann Herman Schein.
Kleine geistlichen Konzerten by Heinrich Schütz.
Harpsichord concerto in D minor, BWV 1052 by Johann Sebastian Bach.
Sonata a 2 by Stanislaw Sylwester Szarcynski.
Symphonies nr. 48 and 50 by Christian Cannabich.
Concerto for harpsichord and obo in F major by Leopold Hoffman.
Concerto nr.1 for cello in C major by Joseph Haydn.
Symphonies nr.22, 44, 45, 48, 49 and 60 by Joseph Haydn.
Piano Concerto nr. 24 in C minor by Wolfgang Amadeus Mozart.
Virtually anything by Fryderyk Chopin.
Piano concerto in D flat major by Christian Sinding.

If I had to chose one, I would probably go with Bakfark.

Sorry No ZIP! I don't play the organ, I think only Ganesh could really do the instrument justice as he has four arms :) I dabled with keyboards as a child but never seriously.
