How can i approach to them. I want to know what my opponents have in their cities so that i can choose the right enemy as target.

Hard really. When you capture cities most buildings apart from wonders are destroyed. Top 5 cities will help you determine wonders. Personally I never really plan wars over buildings unless I want a wonder like mids. You can normally tell by the graphics if a city has this. Other things like granaries, barracks, castles you just spot over time from looking at AI cities.

Overall an AI capital will normally have the most buildings. Larger cities too. better to focus on your game rather than look for cities to attack with buildings. Land is key! I would rather have resources and great land as ultimately most cities rarely have more than a granary, forge, barracks and library for the human player. Only the Ai spam buildings.

Zoom in: Scroll upward with the mouse wheel or press the Page Up key
Zoom back out: Scroll downward with the mouse wheel or press the Page Down key

Start off by looking at the right or left edge of the screen to mentally remember how much of a view that you started off with, so that it will be easier to restore the view to what it was originally after you are done looking, to avoid "bugging" your brain that the view "isn't quite what it was previously."

If you aren't certain what a Building is, refer to the Civilopedia (F12) and look at entries for Buildings that are likely to be built in the current tech era, or at least the era that the AI is in... don't forget about a Civ's Unique Building, which will look different from the Building that it replaces.

Also, confirm that Globe View Buildings are visible: Ctrl + o for Options -> Graphics tab -> ensure that the "Globe View Buildings Disabled" option is not checkmarked (or, would one call it not x-marked, since they use Xs instead of checkmarks?).

This is usually higher level stuff for SGOTMs and such, but if you enjoy it you can definitely identify all of the buildings by the graphics when zooming in. To take this a step further, military buildings have a soldier value (power) associated with them so you can actually deduct this from the AIs power number (if you have access to it) to figure out their power from troops.
