On my game I have a pasture where I've been building horse units. All of a sudden the horse units became unavailable even though the resource is on the city screen. I rebuilt the pasture, and now the horse units have just vanished from the city screen! What's happened?

The units may also require Iron and your city has lost access to it for one of the reasons above.

I don't think there are any random events that destroy resources (although they can certainly destroy improvements.)

If you're unable to build knights, you should still be able to build chariots & horse archers. (Do you have HBR & Archery?)

Nope, you still get horses, just have nothing to use em on (assuming you have oil). You can still trade away the spare horses, or keep them in reserve in case you lose all of your oil.
