Help needed - what techs come after 1200 AD?

I'm in the process of reorganizing the tech trees for the British Isles mod. The mod covers 400 AD to 1200 AD. What techs should be cut out? That is, in the real world, what techs came significantly after 1200 AD?

My basic cutoff will be to eliminate the techs in the industrial and modern eras. Any comments or suggestions would be most welcome. I've never messed around with techs on a scale like this before.
 
I know guns weren't significantly uses until after 1200 AD. So you can remove them or put it at the end of your tree. Also Education (of regular people) didn't happen until after then as well.
 
Different techs were invented at different times for different cultures. The Chinesse had gunpowder in 1200 and I think the Koreans had the printing press (not sure). The british didn't though. Since wer'e talking british, I would not include gunpowder (or anything that has it as a prerequisite) or printing press. Copernicus lived after 1200, so keep astronomy out. I would allow education in, though, because there were many universities in 1200. No, regular people didn't get to go until relatively recently but the elite did go to universities. Regular people didn't get to use writing either until long after it was invented, in the industrial age for many people. Take out economics, too.
 
The last scenario for the mod is the Norman invasion c1150 and we'll need a few hundred years after that for the timeline. I'm going to use gunpowder (saltpeter) as the cutoff instead of the abritrary 1200. Given this new condition would a straight cutoff at the end of the medieval era be acceptable?
