I've found that adjuting the AI Agression (available with Conquests) can make for different games when playing with modded civ numbers.
For example I have a rather fun game going right now. Huge map, Continents with Large Land Masses. 20 Civs with the AI Agression set to highest. I was able to expand to about 10 cities and then the fun began. I was surprised to start learning that the AI were actually fighting each other and conquering. I quickly had to take the Greeks (I was Roman) and Eqyptians to keep up. Then it was about 7 leaders and 4 or 5 minor civs. The minor civs are making it interesting because they have all MPP with different leader Civs. FYI - I'm on Monarch level. So far I have a slight edge on tech by 2 over the Ottomans. I foresee a large World War about to happen though.
So as you experiemnt with number of AI Civs on your map I also suggest adjusting agression levels.
I just tryed a costum map with all 31 civs at once just to see what it was like. It got a bit out of hand by the middle ages. Usually I play with 16. I like a lot of civs, I think it adds more depth into the game.
