How often does backstabbing happen?

The AI thought process is ridiculous. In my current game, this has happened 4 times now:
Monty Declares war
shows up with a half a dozen units
2 turns later he's fleeing with is tail between his legs
while fleeing he offers me a peace treaty demanding every piece of gold and resource I have
10 turns or so later he'll offer me a flat even peace treaty

after that expires it's usually 2-3 turns before we do it all over again

Augustus has done the same thing twice to me

This time, Mongolia wanted me to join them in a war against him, so I said sure.
I went in rolled over 2 cities without breaking a sweat, took out about a half a dozen of his units, and gained a very defensible position (good city across a river, lots of hills on my side)
He offers peace for 10 turns, I take it. It expires, he declares war. First turn I take out 2 of his units and that's where we are now.
I'm units up on him
crossbows vs archers
longswordsmen vs legions
trebuchets vs catapults

Even the most bloodthirsty AI would have to realize this is a losing proposition for them.

Their trade logic is no better:
I'm more powerful than another person
I offer up a random luxury resource for one of their random luxury resources
they say no
I ask them what they'd want for it:
3 of your luxury resources
100 gold
and open borders
yeah..that seems fair, and let's not forget that I've slaughtered a couple dozen of your units while you managed to muss up the hair of one of mine..

All this on prince level
