Keeping vs raizing cities

Im playing my first game where I'm trying to conquer the world. Just wondering whether other players on here keep cities that they capture or raize them.

It depends on if the city is in a good location or not, or if I can support it. I always keep holy cities or capitals, though.

Sometimes I'll raze a city, and have a settler available to settle the prime location 1 tile over from where it had been.
