I'd say Lorenzo leader of Tuscany, and Duomo as UB.
Although pizza is simply the best dish in the world, if made correctly, it's a very recent thing and not representative of Tuscany and Lorenzo il Magnifico

Maybe a Doumo should replace Castle and give some happiness bonus? since if it replaced cathedral it would be pretty underpowered.
