Well, as a shamless plug for my own works, look at the late Roman to mid Byzantine article for a fair amount of info on those armies right here in this forum, as for a more broad spectrum of topics, I dont know,I suppose you could try just posting your questions here

But I think that PBS has a show that promotes this kind of stuff.
