1. I am assuming the flanking bonus is received when my units attack the flanked unit during the same turn but one after the other? There is no way to make my units attack simultaneously they attack one after the other, right?
2. Resources, such as iron, are used up to build a unit but how often and how much iron does a mine typically generate?

1. Combat is always sequential. If you want two units to attack one enemy, they have to do one after the other. The flanking bonus of 10% is given just for having a 2nd unit next to your attacking unit. It doesn't have to go-attack. If you are in attack mode and hover over the opponent, it says +10% flanking bonus in green in the combat stats.

2. The amount of iron a mine generates is fixed from the moment you discover it. If you hover over the iron patch it says whether it's 2 or 6 units of iron (the typical amount). That's what you get. A 2 iron patch doesn't become a 3 iron patch after 1000 years of mining.
