I'm trying to collect gold, but when I build the Knights Templar, I keep getting Crusaders, and it takes away from my gold. My current government is Republic. I'm playing Conquests, and I'm the Germans. If you need any more help, then please just ask me. Thanks in advance!
 
In a Republic you should be making a good little bit of gold despite having the payload of all your units. If the units cost you too much it might be time to lesson the number of rival cities. Also, make sure you have (ideally) every tile being worked roaded whenever possible.
 
If you don't want to pay unit support don't build KT. Or disband the templars for shields.

But better to put them to use, and crush your opponent. Especially in Replublic it's important to get cities over size 6, you get more free unit support.

Really, what I built it for was to make sure that my enemy didn't get it. He probably knows how to use it better than I do.

I would doubt the AI knows how to use Crusdaers better than you Bllasae. If she does, don't worry, because soon enough you'll learn how to do it better than the AI. The AI *never* changes his strategy.

Sounds like you need to pick more fights. The more you war, the better you'll get. If I were to create a short list of things to help, it'd say:

1) You can never bring too many units to the party. NEVER attack with fewer than two units; ideally have more than 3 for small towns, closer to a dozen for larger cities. My personal rule of thumb is bring at least one attacker per pop in the city you are attacking, more on higher levels or when attacking tough defense (ie knights vs pikes, cavs vs. rifles)
2) NEVER attack with a damaged unit, unless you are attacking a 1 HP low-defense rated unit with a 4/5 elite strong-attacker (4-of-5 hp swordman vs 1hp spear, sure why not). Otherwise, you are simply tempting the RNG gods to screw you over.
3) NEVER leave single, damaged units unguarded, unless you are trying to draw enemy units in that direction (in which case make sure they can't actually get to the damaged units)
4) Use terrain in your favor. Lead your armies along hills and mountains, never attack a city across rivers unless you have overwhelming force (like a cavalry attacking a longbow). Don't be hasty; if it results in an extra turn before to get into position, fine. Better than losing a stack and becoming vulnerable to counterattack.
5) don't underestimate the power of artillery. A) you can destroy city improvements like barracks and walls that will impede your progress, and B) you can see exactly how many units are in a town, thus knowing how many units you should have to attack. Each time you damage a unit, it rotates to the back and a new, healthy one pops up. Once you rotate back to the first one you damaged, viola! You know how many are there. A stack of trebuchets is cheap and effective. Don't be afraid to put off an attack for several turns while the trebs go to work on the city.
 
Oh and one more thing:

Workers. Workers are some of the most important units in the game. Without them, you can't get roads built or improve terrain. Without roads and improvements, your military will be hopelessly underfunded and movement hampered. My guess is that if you are new to Civ3, you probably don't have enough workers and your money woes are largely due to lack of commerce. How many workers do you have per city? 2/city is considered bare bones minimum for a strong game, and slaves only count as half...

EDIT: Judging from the screenshot over in the other part of the forums, I suspect there is another problem at hand: how many cities do you have? More cities = more unit support. Remember that each city can only work the 20 tiles within the "fat cross", so spacing them further apart than four tiles is an absolute waste. Cities DO NOT need a heap of resources -- bonus OR strategic -- to survive. Your empire, however, needs as many cities as you can spam out for IT to survive. Many advanced level players even put cities a mere two-tiles apart, regardless of what kind of terrain is beneath them.
