My pretty standard strategy.

Early game, expand quickly, found two production cities. Get writing asap, get gp farm in capital. Get alphabet, trade for iron working and the rest of the junk (actual nice thing about immortal is the ai always has iron working by 1000 bc). Typically against ai's ill get roughly half swordsmen, 1/4 chariots, and 1/4 axemen with maybe a couple spearmen just for cover.

Raze all of their cities except for the best three you can find, turn all of those into commerce cities. Get fuedalism and code of laws asap, get a granary and courthouse in each city. Trade for calender, and get all of your cities +5 food and grow them out to their happiness cap.

Focus tech on getting macemen knights and catapults and i like to get a few trebuchet (in higher difficulties you can probably pick up engineering as well once you can guilds). Attack your next neighbor, pillage every cottage thing in the first cities you attack, and save the last one or two you conquer as commerce cities.

Research up to chemistry (just two techs after guilds so should have it by the time you conquer with your mideivel army). Start pumping out macemen, upgrade to city raider and turn into grenadiers. Build a force of grenadiers, once war warriness is gone, swarm over your next enemy with your grenadiers (if you did it right you are pretty much guarenteed to be going up against longbows... your city raider grenadiers will just roll through them)

Tech up to military tradition and then steel, but after that not much really to tech to, so transfer all your commerce into culture for the happiness, and money for upgrading your troops. Typically at this point, if everything is done right you will roll across the map with huge forces of 80+ grenadiers, calvary and cannons and just conquer the world. It takes the ai forever to get to infantry, and if you worry about, just vassal a techer like mansa or asoka and use them as a barrier. Typically though, you should have plenty of time to conquer the world at this point.

Yea im really bored, but this is the basic strategy ive found works the best for me that ive been using since monarch difficulty. It works very effectively for immortal difficulty as well.
