Plastic!!!! Plastic is artificially produced. How can something that is artificially produced be a natural resource. Rather, plastic creation could be a tech in the late industrial-early modern age.
 
Many great suggestions here. Most major resources are covered well. I do like a bit of variety in similar resources (instead of just cows and wheat, maybe sheep, pigs, shellfish, corn, barley, rice, etc). This has been done in several mod packs. Other things I've seen and liked included marble (to build those glittering palaces and temples), exotic woods, exotic animals (for the games if you're Rome), exotic fruit, sugar, tobacco, coffee, tea, opium, platinum, copper (needed for bronzeworking), papyrus (spelled wrong but needed, before paper, for libraries) etc.

they are about as close as lightning and lightning bug.......saltpeter on your french fries will leave you "limp". :lol:
 
Saltpeter is potassium nitrate, used for the production of gunpowder and fireworks.
Salt is sodium chloride, at least common table salt is, used for food preservation and flavouring.
The only reason I can think of for the similarity in their names is their similar visual appearance. Here is a picture of saltpeter:
