It is really impossible to create a colony/city after declaring independence?
When i try it says: "You can't join colonies until the Independence War", but my Independence was already been granted by the King.

Yeah, you're right, because when the war overs, your score will be told and no more will be recorded.
Now another thing: it happens to me one time, and i enjoyed it.
When i got my independence after i fought against the king's army i somehow saw a revolt in my newly country. Looks like some torries rebeled from my command and gathered a caravel and some soldiers (not regular soldiers, but normally grey soldiers). I, of course, get rid of them very quickly with my Continental Army and Cavalry. But i enjoyed this fact.

Can anyone tell me which conditions will this happens?

A condition I can think of is the when you colony's liberty bells number is low. I usually only play with a few colonies for this reason and I keep them all at 100% so none rebels.

You play with only a few colonies? But lesser the colonies the lesser the profit you make.....

Most of the cash comes from the big treasures from rumors which is what I exploit under the conditions mentioned previously, from profitable trading with Indians and from plundering goodies from AI nations' ships using privateers.

You do not need many colonies to achieve this. And it is much easier to defend against the Royalist army when you have only a few colonies not to mention quicker to get the required liberty bells for all the colonies.

Then How much colonies do you do?

I wish you could play after all is said and done, just like in civ I. I mean, if I shed blood sweat and tears to form my new nation, I want to see it progress!

@covok48
Can you expand on the statement

if I shed blood sweat and tears to form my new nation, I want to see it progress!

Is it to say that you want to have as many cities as possible?

Yes to the above.
