...and I don't feel like I'm in control here. Everything seems so slow and I don't think I'm getting the hang here. Currently I'm playing as Arabia (I thought from there bonus I could get really strong science and religion) but America has a stronger religion and some other civ I haven't met has strong science). Any tips here? Like in general?
 
I've been randomly rolling civs because I'm more interested right now in getting the hang of the game than getting the most out of Civ bonuses. Arabia seems intended to get a religion while doing other things, rather than focusing on religion - since they're basically guaranteed one so long as they have a pantheon even without focusing on religion.

No religion tips as in my Greece game I don't have one, other than adopted Hinduism, but you're not very specific on what issues you're having. In my experience so far Civ VI is rather forgiving of early blunders - you can focus on specialising rather late (1500 AD in my case) and rocket to the top of your chosen league table.

One thing I've seen mentioned here which meshes with my experience so far is that, thanks to districts and the general dearth of productive land on most maps I've seen, production is the most important yield. Most of your other resources are ultimately going to stem from district buildings and adjacency bonuses (as there's no science from population or directly from commerce, resource bonuses from the most productive civics are tied to district buildings or - earlier - adjacency, and there aren't too many buildings that can be constructed in the city centre), so you need to maximise hammers to build up your districts as soon as possible. You also need to go wide to maximise the number of districts of the same type you can build.
