I tried to create one for my Industrial Greek city set, and i came up with this:

Not sure how authentic it looks though. It was a bit of a mash-up too, but i hope it is passable.
Do you know of forts that had a similar shape? The regular star-shaped one could not be modelled due to its shape which would not cover the entire town, or it would become too big.

Making the fortifications look anything like "real" star-shaped forts would require a sloping front that would make them prohibitively large, I'd think.

Do you have to have the fort entirely surround the city? As dachs said, you start to consume your whole tile with the city image. Could you just place a small star fort on the side of the larger city image? It would still represent a protected city, but not cover over the whole tile. With that larger town on the right, may put the fort at 7 or 8 o'clock on the city's edge.

The Citadel of Halifax site I think gives you a really good view of what a late star fort looks like. But that's what they evolved to near the end of the time they were used.

This. I don't know if there are in-game issues with it (even as simple as wanting consistency), but at the time cities were generally defended by nearby forts, not surrounded by defenses. Halifax, as linked by Cutlass, is a perfect example.

In Civ4 BtS the city has a wall around it, but the castle is part of the wall or within the walls. You could do it that way.

Basically as everyone else is saying, take the NTW route and just make a small one or two around the edges of the city.

Thank you all for the suggestions :)

I thought of having it outside of the city, or next to it, but my other forts all surround the towns so continuity was an issue here.

I think i will keep it as it is, although it is not perfect.
