You can't overcook it.

And when you get people used to cooking fatty meats like lamb or beef and give them such an extremely non-fatty meat like roo, they inevitably overcook it till its too tough to eat.
I think you mean you can overcook it. I've experienced this with ox-tongue. Cooks much, much quicker than you'd expect from dealing with other stuff.
