To take control of your contintent, preferably with 2 or less enemies, quickly build up your army. Don't place an empasis on creating a quantity of cities, but place them strategically so the other civilizations can't easily walk into your area without crossing your borders. This will allow you to develop roads between your cities for easy travel. The AI should get a settler in your region and establish a city. Move your army by the borders of their existing cities and take advantage of any hills or mountains that can be used to increase your defense chances. Attack the city they just made in the middle of your region. Since its new it should easily fall. As the attackers come out of their areas, they will be forced to fight your troops to get into your territory, giving you the advantage of being the defender. They will ask for peace, or be aggressive and let you slaughter them. Either way you keep the city in your region.
