Another thing I like to do is play a game where I "almost" kill everybody by 3000 BC (usually on the small World Map as Egyptians), but then leave one civ small, cramped, and pathetic, while I leisurely research techs and rack up a high peace score. I'm pretty indecisive, though: it'll be AD 1923, and I'll be sitting there, going, "Hmmmm, kill last enemy city, or launch the spaceship...kill, or launch..."
In case you were wondering, the barbarian in me usually wins out in this type of situation.
I don't mind a challenge, as long as there's a way to win via copout if I get too frustrated.
