i was playing with carthaginians on an arch. map with lots of water. i decided to invade china, they had just 5 cities. i landed my infantry and guerilla stack(about 10 units, enough to keep a square). i had to wait the next turn to attack, but china's longbowman, rifleman and riders "ate" my infantry stack!! none of attacking chinese units were lost.

same game,
war with indians
they declared war on me, brought a fleet to my coast. i hadnt built my modern navy yet, i just wanted to use my frigates to bombard and send back the destroyers. in eight bombard runs in two turns, just one hit! i cannot understand, frigates bombard galleons and hit all the time but cannot hit destroyers! is there any attributes to hide from bombard or i just have lack of luck?

much enough to kill my infantries, not enough to invade a civ
i forgot to add: they didn't bombard my units

The defense value of a unit has something to do with how much damage it takes from a bombing. That would explain the destroyer thing.

What were the ranks of your infantry?

Maybe the RNG just hates you.

The chance of a bombard hit is related to the defense of the target.

that's good. i won't even dare bombarding a modern unit with old units.

my infantries were veteran, some were elite (2 of them)

maybe irrelevant but i want to ask something: does the unit's defensive value has anything to do with its attack and win chance?

Nope, when a unit is attacking the only thing that matters at the moment is it's attack value and hitpoints. Good question though.

Edit: Just so we're perfectly clear, if a longbowman (attack=4) attacks an infantry (defense=10) then for each round of combat there is a 4/(10+4) = 29% chance that the longbowman will be the one to score a hit while there is a 10/(10+4) = 71% chance that the infantry will be the one to score a hit.

For an actual circumstance you have to consider external factors which affect the defender's defense, such as terrain, forftied or not, behind city walls, etc. e.g., the open grasslands will provide +10% defense bonus, boosting the infantry's defense from 10 to 11.
