I have found that, although random games are fun, choosing players or land or victory conditions as part of a theme make the game even more versatile. For example, just finished a game that I dubbed "Natives Battle" whereby I chose all the native/tribal civs(Aztecs, Maya, Iroquois, Shoshone, Polynesia, Inca, Celts & Zulu) and made the only victory condition domination. It made for a very exciting game. The Iroquois were on an island with Polynesia and the Maya and quickly took over that whole island. On my island, I was the Shoshone and I was in the center of the Celts, Inca, and Aztecs. The Inca and the Celts were quickly killed off the island, while I subdued the Aztecs until they weren't much of a threat and held back the Zulu until I could build planes, and then I took them over. Then there was an epic battle between me and the Iroquois that took a lot of nukes.

I just started a game on a large islands map with all the divs that have naval-related unique abilities and units, such as England, the Dutch, Carthage, Portugal, and the Danes.

Does anybody else do stuff like this? If so, please do tell!

I like to create "stories" of sorts with my games instead of just running through them to be the victor by turn 279 or whatever. So I dig what you're doing. I only have G&K and had actually thought of a Battle of the Classics with Rome, Carthage, Greece, Persia, Egypt, and a few others. A Holy Zeal scenario might be pretty crazy! Get Egypt, Ethiopia, Maya, Byzantine, Celts, and a couple others I'm forgetting and let the faith fly! ;)
