Can you recieve the benefit of more than one of the same resource?

Or phrased differently: do I lose anything by trading away resources that appear on my Civ trading screen?

There are no benefits of having more than one of any resource. But you can trade away your only resource in the diplomacy screen. So if you have only one of something, make sure it's not something you need before you trade it.

So there is no benefit for having two Wheat or Cows? No extra health benefit?

No extra health benefit, no. Having lot's of different foods is a benefit, but 2 cows just means you have 1 extra to trade.
