i want to try going to war sooner than i usually do.

what is the typical strategy to follow?

where do i set my taxes compared to research?

what do i build, just barracks?
 
Depends on several things. What tribe you are, your starting location, etc. Just start off as you normally do, expanding and setting up your core. Your core will build the military you'll use to go to war. If you are a military tribe, barracks will be cheaper to build. So they should be a priority, once you have a Settler and Worker producing city/cities.

You should always research at the high levels possible, while keeping your nation operational.

If you're the Persians, go for Iron Working first. Warrior Code is usually at good place to start for most, as Archers come in handy. If you're the Iroquois, you may want to go Warrior Code, The Wheel, Horeseback Riding.

Find and secure your resources. Iron and Horses, not necessarily in that order. Get your road network set up. Be aware of the obstacles that lay between you and your opponent. Stay focused on what you'll need to attack. Then do it.
 
when do you usually go to war? knights? cavalry? infantry and artillery?

if you mean warring in the ancient age, then it either comes off spectacularly and you're set for the rest of the game, or you win the war, and you've lost so many turns of cash and science that its just ridiculous

as with everything, it depends on your start, and also if you land the resources in your tiles

i'd say the best tribes would be persia or celts for early wars

romans, less so, but if the start is excellent, its doable

personally, i prefer to build a base of 10-20 cities, get out of ancient age, then consider whether i want to war, or focus on research/cash

The typical strategy is: use your most shield-producing cities to build barracks, and then lots of strong offensive units. Concentrate them in a stack, and go stomp on your opponent to reach your objective.

Note that you should *have* an objective! It might be to secure iron, horses, or saltpeter. It might be to capture a city with a wonder. It might be to knock your nearest opponent down, or it might be to conquer an opponent totally.

As cyc wrote, keeping your research turned up is nearly always beneficial. There's no specific changes to make in your research or tax rates to make war. Something to consider: if you are close to discovering a tech that will let you upgrade your troops, say, horsemen -> knights or swords -> medeival infantry, you may want to conserve some cash in the turns preceding the war. That way, you can upgrade some units and your stack will have more power.

"What do I build?" If you're planning a war, you should definitely build barracks. You will want to delay or defer building city improvements, while you build lots of units. If you have a city with lots of food production and few shields, use that city to build workers and settlers for use in your about-to-be-conquered territory.
 
You might give more useful advice if you post a save or several saves of games that you've played.
 
War before swords usually doesn’t pay off in my experience the attack and defense values are so close your going to loose a load of troops before you cap a single town.

One of the keys I have found when fighting ancient age battles is choose your fighting ground very carefully, if you can get the enemy you throw a dozen horsemen at you whilst your on the top of a mountain theres a very real chance that your going to have an elite swordsman ready to cap off one of the horseis that withdrew in the last IBT. With a swordsman army you should be able to rock the ancient age.

When you're with only one AI on an island, the 'war' for ground is more often than not a cold war.
I move my troops towards the AI's, so they can't expand on places where they want.
I have moved my troops on places where I knew the AI wanted to put a city - or just blocked settlers from moving out of jungle or mountains.
Sometimes if you know you should fight an AI later on to take the entire island/continent, you can declare war and take some workers and/or Settlers at the same time. This halts their expansion. Making the future war easy.
 
This is my fave strategy for quick conquest.
